With its pink, green, black colours silver-green leaves, health and beauty elixir oil, the olive has been the symbol of
tranquility, peace, long life and abundance for hundreds of years.
Our olives are picked from the Ayvalik region in the north west coast of Turkey. This is one of the unique places
around the world known as an "olive oil paradise". Here the climate and soil conditions are said to have been created for
olive trees.
Ayvalik is a doorway into Turkey, thus to the world. It has been known for the high quality olives and olive oil
production for over 3000 years, the olive oil of Ayvalik is truly a gift from nature to us.
Since its establishment in 2002, Taliani has become one of the highest quality olive oil and olive oil soap
producers. Currently our products are distributed locally in Turkey as well as being exported to countries in North & South
America, Asia, Africa, Europe and Australia.
Taliani produces from among 1,500,000 trees in a region of 50 km by 30 km between Dikili and Burhaniye. The olives
grown in this region are known as "Ayvalik Type" olives and the region is about to get DOP (Denomination Of Protection)
registration and will be known as the "DOP Edremit Gulf".

Being very knowledgeable in the industry, our experts constantly follow the season's crop in the region and select
the best quality olives grown using the most modern farming techniques. The olives are harvested by hand or hydronomatic
equipment to avoid harming the fruit. Olives that had fallen from the trees before harvesting never go into the production
of Taliani's olive oil.
Taliani brings together traditional and modern methods to produce high quality olive oil. Among the modern equipment
is state of the art machinery including centrifuges and temperature controlled stainless steel chrome storage tanks. The
water in the olive oil is extracted precisely (water in olive oil tends to speed up the oxidization and destroys the taste)
without any traces left.
The olive paste, which is obtained by processing the olives within 10 hours of harvesting, is never heated, as heat
tends to lower the effectiveness of certain vitamins, although heating the paste would allow for more oil, Taliani is
diligent in preserving the integrity of their products by never using this heating process.
The maximum level of free acidity in Taliani's extra virgin olive oil is 0.8% although the actual levels at the time
of bottling are lower than this, usually around 0.6%. Special Harvest Extra Virgin Olive Oil has levels lower than 0.5%,
usually around 0.3%.
